30ml Brandy
30 ml Cointreau
30 ml light Rum
15 ml Lemon Juice (optional)
3 or 4 Ice cubes
Pour all ingredients in a cocktail shaker and shake vigorously. Strain into a cocktail glass.

30 ml Vodka
30 ml Cointreau or Triple
Sec

In a shaker half-filled with ice cubes, combine all of the ingredients. Shake well.

STRAWBERRY-GRAPEFRUIT COOLER
1 cup whole fresh Strawberries
1 cup unsweetened pink Grapefruit Juice
3 tbs Sugar
10 Ice cubes
Combine first 3 ingredients in container of an electric blender; cover and process until smooth.
With blender running, add ice cubes, 1 at a time, process until smooth. Serve immediately.
Yield: 3 cups

FRUIT-YOGURT
SWIRL
1/2 cup drained canned,
unsweetened Pineapple chunks, chilled
1/2 cup drained canned, unsweetened sliced Peaches, chilled
5 Ice cubes
3 whole fresh Strawberries, caps removed
1 medium-size ripe Banana, frozen
1 (8-oz) carton low-fat Vanilla Yogurt
Combine all ingredients in container of an electric blender, cover and process until smooth.
Pour into glasses, and serve immediately.
Yield: 3 cup

MANGO-PAPAYA SMOOTHIE
1 Mango (about 1 ½ pounds), peeled, pitted, and chopped coarse
1 Papaya, peeled, seeded, and chopped coarse
2 cups plain Yogurt
2 tbs fresh Lime Juice plus 4 Lime slices for garnish
3 tbs Honey, or to taste
1/4 tsp Almond extract
In a blender, blend the mango, papaya, yogurt, lime juice, honey, almond extract and
1 cup ice cubes in batches until the mixture is smooth.
Blend in another 1/2 cup ice cubes if desired to thin the smoothie mixture to desired
consistency. Divide the mixture among 4 chilled large glasses and garnish each
smoothie with a lime slice.
Serves 4

MIDORI ILLUSION
These would have to be my favourite drink of all time.
30ml Vodka
15ml Bacardi Rum
15ml Gin
15ml Cointreau
15ml Malibu
dash of Blue Curacao for colour
Pineapple Juice
2-4 Ice cubes
Pour alcohol into a cocktail shaker. Add enough pineapple juice to 3/4 fill
the shaker. Add ice cubes and shake vigorously.
Strain into shot glasses or spirit glass and enjoy.
Serves 1 - 2

3/4 Banana
30ml Sugar Syrup
30ml Bacardi Rum

Blend with ice and strain.
Serve in a 140ml Champagne saucer and
garnish with a slice of banana and mint leaves.

Pour over ice in a 385ml Poco Grande Glass and top with soda.
Garnish with a strawberry or slice of kiwi fruit.

Shake with ice and pour into a 210ml Hurricane Glass.
Garnish with a pineapple spear with leaves and a cherry.

STRAWBERRY SMOOTHIE
1 tbs Strawberry Topping / Syrup
1/2 cup reduced-fat Strawberry Milk
1/4 cup reduced-fat Strawberry Yogurt
1/2 cup whole fresh Strawberries
Pour strawberry topping into a chilled glass.
Place strawberry milk, yogurt and strawberries in a blender and blend until smooth.
Pour milk mixture into the glass and garnish with a strawberry half (optional)

BAILEYS IRISH CREAM
This is the easiest recipe and the results are always delicious.
It is also very cost effective. I prefer to omit the coffee.
3 tins Nestle Condensed Milk
3 tins Carnation Evaporated Milk
3 x 300m Bulla Thickened Cream
1 ½ x 250g blocks Cadbury Chocolate
6 tsp Vanilla Essence
700ml Scotch
Optional - 1 ½ tsp Coffee
Melt chocolate in a double saucepan. Heat condensed milk and gradually
stir into melted chocolate. Mixture will become lumpy, don't worry, just
blend until smooth in an electric blender. Allow to cool.
In a very large bowl mix chocolate with remaining ingredients.
Pour into empty, cleaned scotch bottles and refrigerate at all times.
Makes 5-6 x 750ml bottles

CHRISTMAS PUNCH
1/2 cup Sugar
2 cups freshly made Tea
2 cups Pineapple Juice
1 1/2 cups Lemon Juice
1 litre Lemonade
12 Cherries
12 Orange slices
Dissolve sugar in tea. Add pineapple and lemon juice. Chill well.
Add lemonade just before serving. Serve garnished with cherries and orange slices.

STRAWBERRY BANANA SMOOTHIE
1 cup fresh Apple or Orange Juice
1 Banana, sliced
1 cup fresh Strawberries
Place juice, banana and strawberries in a blender. Puree until smooth.
Pour into a tall glass and serve immediately.

MANGO HEALTH SMOOTHIE
2 Bananas, chopped
1 Mango, peeled and chopped, or drained canned Mango
2 tbs Honey
2 cups Soy Milk of your choice
1/4 cup Natural Yogurt
2 tbs Bran
Ice Cubes
Place bananas, mango and honey in a food processor or blender. Process until smooth.
Add soy milk, yogurt, bran and ice cubes. Process until well combined.
Makes 4 cups

BLACK & WHITE ICE CREAM SODA
4-8 tbs Rich Chocolate Sauce (see recipe below)
4 scoops good quality Vanilla Ice Cream
1 ltr Soda Water
Rich Chocolate Sauce :
1/4 cup Brown Sugar
1 cup Cream
30g unsalted Butter
125g Chocolate
To make the sauce : gently melt sugar in a small saucepan, stir in cream
and butter and add chocolate. Stir sauce until well blended.
Add more cream, if necessary, to dilute. Allow to cool.
Keep 4 tall drinking glasses in the freezr until ready to serve. Just before
serving put 1-2 tbs of the chocolate sauce in the bottom of each glass,
then twirl the glass around to coat the sides of the glass with chocolate.
To each glass add a good scoop of ice cream. Pour in the soda and stir
briefly with a long handled spoon, just enough to mix the chocolate and
soda so the whole drink is frothy.
Drink with a straw and then scoop out the ice cream with a spoon.
Makes 4
